I know Jillian Hart had a cow Buttercup I think in the Granger series. Also Carla Capshaw had Cat a tiger which is now extinct in The Gladiator and had a Puma I think in one of her other book in that series. I loved Cat several other readers in a goodreads group wanted Cat as a pet. Narelle Atkins has a magpie that is sort of like a pet in Falling for the Farmer.
